Mardi Gras, otherwise known as Fat Tuesday, is all about indulging in rich, heavy foods. (Fat Tuesday comes right before Ash Wednesday, the beginning of a fasting period for Christians.) So on Mardi Gras, we feast.
And because the home of the most famous Mardi Gras carnival celebration is New Orleans, we feast on foods that are inspired by the southern city.
