Whatever your connection to Mardi Gras, if you’re not in it for the food you are doing it wrong. Mardi Gras, otherwise known as Fat Tuesday, is all about indulging in rich, heavy foods. (Fat Tuesday comes right before Ash Wednesday, the beginning of a fasting period for Christians.) So on Mardi Gras, we feast.
